Rescheduling that challlenge...

Our one year old has recently been sick, had an allergic reaction to her antibiotic, and then had a subsequent breakout AFTER that infection.

It's been a tough few weeks.  We didn't know if the breakout was food related, and we recently found out it's not (which is great) but rather just a reaction to the illness, but in any case, it didn't seem like introducing different foods at this point in time was realistic or prudent.

Not sure what we will do, but I am going to attempt to start moving on some recipes.  Things are better with the little one, but things are also getting even CRAZIER with the husband's work.  So we (like most of America) are being flexible with our food.  I don't think, given the year that the husband is going to have with work and a night class at Harvard and (like much of America as well) NOT having any family around to give me a hand with the little one - AND - still trying to work from home myself here and there.... doing this "one recipe a day" thing is going to work out for us.

Perhaps we will do a month of chicken recipes over the course of two months.

The Challenge.

I recently resigned from my full time job to stay at home with our one year old.  Things were getting crazy, and our entire life was logistics and planning, so it was a necessary move. 

And, I'll admit, it was one of the best decisions I've ever made. 

But it's been three weeks at home, and I'm slowly going bonkers.  I almost look forward to the end of naptime some days so I can play with the baby again and have something to do.

Time for a new challenge!

I saw this commerical the other day while watching daytime TV (what else are you supposed to do when the baby is napping and you have mounds of laundry to fold?) and I thought to myself:

We eat a lot of chicken.

And I do the same darn recipes over and over again.

And now I have the time and the energy to try out new recipes.

And I'm just obsessive enough to do something like this.

And a blog can keep me honest and chugging away at my goal.  (and maybe if I mess something up, a super smart cousin of mine can help me figure out why I burnt my *fill in random food item here* again...  I do have many super smart cousins.)

And my husband is a good sport about trying weird new things, like the beet/fennel/kefir soup I made for lunch yesterday (which was actually sort of reasonably okay, but I probably won't make it again.)

SO!  It has been decided.  During the month of August 2011, I will attempt to make a different dish with chicken in it every single day.

It will be The Month of the Chicken.
